We are getting ready to bring 2018 to a close. It is New Year's Eve and a beautiful, windy, cold, dark, 33 degrees Fahrenheit outside, which, in my book, is grilling weather! I recently acquired a Traeger Pellet Grill and I am eager to try it out on some baby back pork ribs. Let's get started.
Step 1:
Open a beer of your choice and pour the beer into a nice glass (I chose a nice vanilla porter from Breckenridge Brewery). Take a sip and set aside for later. It is important to sip some beer throughout the cooking process, because beer tastes good.
Step 2:
You will probably need some baby back pork ribs for this recipe. If you don't have any, go buy some. I have a party to go to tonight, so I am cooking four slabs, but it is up to you how many you want to make. I have no control over your life, the choice is yours.
Step 3:
Prepare rub - Mix together the following ingredients (per slab of rib):
1/2 cup dark brown sugar
1 Tbs. chili powder
1 tsp. cumin
1 tsp. paprika
1 tsp. coarse kosher salt
1 Tbs. dried minced onion
1/2 tsp. fresh ground black pepper
1 tsp. mustard powder
Prepare ribs - Rinse and pat dry with paper towels. Brush Dijon mustard onto both sides of rib. Let sit for about 10 minutes at room temperature. The mustard will act as a sticky base layer to allow the dry rub to adhere better. Apply an even amount of the entire dry rub mix. Your hands are going to get messy, and that's okay.
Step 4:
Clean hands. Sip some beer.
Step 5:
Turn on Traeger Pellet Grill to the smoke setting with the lid open. Allow to heat up for about 5 minutes. After 5 minutes, turn temperature control knob to 225 degrees. Place all your ribs on the grill, meat up, bones down. Close lid. Set a timer for 30 minutes.
Step 6:
After the 30 minute timer has gone off, spray or baste ribs with apple juice. Repeat this step every 30 minutes for a total of 2 hours total cooking time. Feel free to drink beer will waiting.
Step 7:
Mix melted butter, honey, apple juice, and brown sugar (per slab of rib).

1/4 cup apple juice
1/4 cup dark brown sugar
1 Tbs. honey
Step 8:
After 2 hours of cooking ribs on grill at 225 degrees, remove ribs from grill. Place each rib in an aluminum foil "boat". Pour butter and apple juice mixture over rib, meat side up. Flip rib, meat side down, and wrap completely in foil. Return to grill and cook an additional 1 1/2 hour. You should drink some beer while waiting.
Step 9:
Remove ribs from grill. The rib meat should be pulling from the rib bone. The ribs in the picture below are actually overcooked by a good 30 minutes. Remove ribs from foil. Baste ribs with BBQ sauce. Return ribs to grill and heat for 15-30 minutes.
Step 10:
Remove ribs from grill. Let rest for 10-15 minutes. Then, cut ribs between bones.
Step 11:
Eat and enjoy! Don't forget to drink your beer.
